Instructions:
1.Preparing the Jalebi Batter: a. In a mixing bowl, combine the all-purpose flour, gram flour, baking soda, and cardamom powder. b. Gradually add the yogurt and water to the dry ingredients and whisk until you have a smooth, lump-free batter. You can also add a pinch of saffron strands to the batter for a beautiful color. c. Cover the batter and let it ferment for 8-10 hours or overnight in a warm place. This fermentation process is crucial for the jalebi's flavor and texture.
2.Making the Sugar Syrup: a. In a saucepan, combine sugar and water. Bring it to a boil and let it simmer until you achieve a one-string consistency. Fill a jalebi squeeze bottle or a plastic ziplock bag with a small hole at one corner with the fermented batter. c. Squeeze the batter in a spiral or criss-cross pattern directly into the hot oil. Fry until the jalebis turn golden brown and crisp. d. Using a slotted spoon, remove the jalebis from the oil and drain them on a paper towel briefly to remove excess oil.
